Dominique is a graduate of Johnson and Wales University in Charlotte, North Carolina with an AS in Culinary Arts and a BS in Food Service Management and a concentration (or minor) in Food and Beverage. She has worked for Chef John Besh at Restaurant August in New Orleans and as a manager and assistant wine director (or sommelier) under Scott Daniels at Blue Restaurant and Bar in Charlotte, NC. She has completed 2 levels of wine certification through the International Sommelier Guild along with the Wine and Spirits Education Trust’s levels 1 and 2, and is currently working towards the level 3 Advanced Certification in Wine and Spirits. In August 2012 Dominique returned home to run Café Dominique in downtown Houma with her mother Donna Chabert-Malbrough, and in February 2014, she became owner of Dominique’s Wine Boutique and Bistro, combining her passion for food and wine.
Shea is a graduate of the John Folse Culinary Institute in Thibodaux, Louisiana. He graduated with a Bachelor’s of Science in Culinary Arts with concentrations of Culinary Operations, Professionalism, and Service along with Management and Marketing minors. Originally from Delcambre, Louisiana, he began working at Café Dominique in February 2012 and became sous chef of Dominique’s Bistro in 2014. With a passion for baking and pastry, he continues to be a critical member of our team.
